Sushi Kibatani is a small sushi restaurant located near the historic tea house district of Kanazawa’s Hikosamachi. Since its opening in 2016, we have been serving sushi made with local fish from Toyama, Himi, and Shinminato, as well as fresh ingredients from Ishikawa. We cherish the natural flavors of the fish, preparing each piece with genuine care and showcasing the seasonal attractions of the region. Each fish from the Hokuriku region has its own unique characteristics. We carefully assess the characteristics of each fish and prepare them in the most appropriate way, such as using salt and sake to bring out the flavor and adding aroma to give depth to the fish. When combined with sushi rice made from a blend of red vinegar and rice vinegar, each piece of nigiri reveals a distinct flavor and character. Enjoy the world of sushi, where all five senses come together for a truly captivating experience.

The interior, renovated from a traditional farmhouse over 100 years old, offers a calm atmosphere infused with the warmth of wood. Behind the counter, the chef’s craftsmanship shines, with each precise and graceful movement of preparing and serving the fish exuding both tension and warmth. Our History
With experience gained at Tsukiji Market, and at "Yoshiura" in Funabashi and "Sushi Aoki" in Ginza, I laid the foundation for my Edo-mae technique. In 2016, I opened "Sushi Kibadani" in Kanazawa. I believe in not only relying on the natural flavors of the fish but also adding the perfect touch for each ingredient. I am committed to bringing the abundant blessings of Hokuriku to life and delivering sushi that leaves a lasting impression with every piece.

Mitsuhiro Kibatani
Growing up in a seafood restaurant in Toyama, I have been surrounded by fish from a young age. I learned the basics at "Yoshiura" in Funabashi and honed my Edo-mae techniques at "Sushi Aoki" in Ginza, where I perfected my skills. Building on these experiences, I became independent in 2016 and opened my own restaurant in Kanazawa, where I focus on sushi that highlights the rich ingredients of Hokuriku. My top priority is to bring out the true charm of each ingredient, providing sushi that leaves a lasting impression on our guests.
